This is a first for the Hodges blog – a recipe! I don’t have much time to cook these days, but I do enjoy finding new recipes and trying new things when I can. This recipe for baked oatmeal came from the Chanticleer Inn which is the Bed & Breakfast where we stayed on our babymoon back in March. We had LOVED their baked oatmeal and were thrilled to discover this recipe for it:
Ingredients:
- 2 c. old fashioned oats
- 1/2 c. packed brown sugar
- 1/3 c. golden raisins
- 1 and 1/2 tsp baking powder
- 1/4 c. chopped walnuts or pecans
- 1/4 tsp ground cinnamon
- 1 and 1/2 c. fat free milk
- 1/2 c. applesauce
- 1/4 c. pure maple syrup
- 2 T. butter, melted
- 1 large egg, beaten
- Cooking spray
Note: I used regular raisins instead of golden and 1% milk instead of fat free. Also, I had cinnamon applesauce and regular syrup that worked just as well!
Preheat oven to 375 degrees. Combine the first 6 (dry) ingredients in a medium bowl. ![]()
Combine the milk, applesauce, maple syrup, butter, and egg. Add milk mixture to the oat mixture-stir well. Pour the oat mixture into an 8-in square baking dish coated with the cooking spray. Bake at 375° for 20 min. Serve warm. Makes 5 servings (I’d say more like 6-8).
